Olive Oil & Sea Salt Brownie Cookies



If you love brownies, cookies, or anything chocolate, you are going to LOVE these cookies; they are soft, chewy, and who doesn't like a good salty-sweet combo?!

 I came across this recipe one afternoon while searching for a cookie recipe that wouldn't make me feel guilty after eating one, or two... or three.. anyways, you see where I'm going with this. 
These cookies call for an ingredient that I'm sure I would have never considered putting into a cookie otherwise; olive oil! 

Olive oil has many known health benefits, as does cocoa powder. Together, these ingredients could make for cookies that are considered pretty healthy for those who want to prevent heart disease. I'm no doctor, but either way, they're good for the soul! This is now one of my favorite cookie recipes!




Olive Oil & Sea Salt Brownie Cookies
  • Ingredients
    • 1/2 cup olive oil
    • 1 cup sugar
    • 2 eggs
    • 1 tsp vanilla
    • 3/4 cup cocoa powder
    • 1 cup flour
    • 1/2 tsp sea salt, plus more for sprinkling
    • 1 tsp baking soda
    • 1 tbsp hot water
    • 1 cup milk chocolate chips
    Instructions
    • Preheat oven to 350 degrees and line baking sheets with parchment paper.
    • In the bowl of a stand mixer, add the olive oil and sugar and mix until well combined.
    • Add the eggs, one at a time, mixing well between each one.
    • Add vanilla
    • Add cocoa powder, flour, and salt and beat until a dough forms - it should be the consistency of a thick brownie batter.
    • In a small bowl, dissolve the baking soda into the hot water. Add dissolved baking soda and mix until well combined.
    • Stir in the chocolate chips with a spatula.
    • Refrigerate the batter for at least 30 minutes, up to overnight (or just pop it in the freezer for 15 minutes).
    • Use a cookie scoop to scoop out heaping tablespoons onto your prepared baking sheets and sprinkle with sea salt.
    • Bake for 10 minutes, or until edges are set.
    • Let cool completely on the baking sheets then transfer to a wire rack to cool.

Makes Approximately 24 cookies - 150 calories/cookie
